  • Try to avoid serving your wine and ice cream chilled. Let your ice cream soften before eating, so you can taste the full magic of the flavors.  

  • Look at the tannins in wine. Bold red wines like Cabernet Sauvignon are rich in tannins, which balance deliciously with savory dishes. However, red wines with too many tannins can turn the delightful sweetness of sugary treats into a bitter experience. So, just be wary when pairing ice cream with red wines. 

  • The more aged, the better. Keeping in mind the effect that wines with too many tannins could have, the process of aging can actually tame the scratchy character of these compounds. During the aging stage, tannins undergo an oxidative process, which balances out their scratchy characters. 

  • The acidity of wine. Most wines are acidic, and this normally balances well with foods, leaving a fresh taste in the mouth. However, with ice cream, the acidity of wine can be a weakness. Just picture squeezing a lemon on top of your ice cream—it is not that enjoyable.  

  • The general rule for any wine pairing is that the wine should be sweeter than the other food
