Quick and easy ice cream bread recipe

Create a surprise in the kitchen with our ice cream bread recipe. Yes, you heard that right. This is a recipe that asks you to mix flour with your favorite ice cream and then bake it. Putting ice cream in the oven does feel strange, but it's worth a try if you love fluffy bread.  

When it comes to the taste, think of it more as a scone rather than ice cream. The flavor is delicate, less sweet than pound cake, and more airy than normal bread. Ingredients

  • 2 cups ice cream, do not use low-fat, low-sugar or dairy-free  

  • 1 ¼ cups self-rising flour  

**You can substitute self-rising flour for 1 ½ cups of regular flour with 3 teaspoons of baking powder plus ½ teaspoon of salt. 

 

Step by step instructions

  1. Make sure the ice cream is melted and smooth before using it in the recipe. You can take it out of the freezer a few hours before. Or melt it for 30 seconds in the microwave.  

  1. Grease an 8x4-inch bread loaf pan with oil or butter. Preheat your oven to 350 F.  

  1. Put the melted ice cream into a large bowl. Slowly mix in the self-rising flour. It is best to use a spatula not to overmix. Stop mixing once both ingredients are well combined.  

  1. Add the mixture to the greased pan. Smooth out the top with a spatula.  

  1. Put it in the oven and bake for 30 – 35 minutes. Check by poking a toothpick into the bread. If it comes out clean, the bread is ready.  

  1. Leave the bread in the pan to cool for 5 minutes on the counter.  

  1. Then, take it out of the pan and leave it to cool fully on a cooling rack.  

  1. You can serve it warm or at room temperature with butter and jam.  

  1. You can store it like normal bread on the counter for up to 3 days.
